Pepperoni Pizza Baked Potato Recipe

Ingredients
  

  • 2 Russet Potatoes
  • 2 tablespoons Olive Oil
  • Salt and freshly ground Black Pepper to taste
  • 1/2 cup Marinara Sauce
  • 12 - 15 Pepperoni Slices
  • 1/2 cup Mozzarella Cheese shredded

Instructions
 

  • Preheat oven to 425°F.
  • Wash potatoes well and pat dry. Poke holes with a fork several times around the potatoes.
  • Rub with olive oil.
  • Season with salt and pepper, to taste.
  • Place potatoes on a cooking sheet.
  • Place potatoes in oven and bake for about 45 - 50 minutes or until soft on the inside.
  • Remove from oven. Leave oven on and set temperature to 375°F.
  • Slit open potatoes.
  • Use a fork to fluff the insides.
  • Spoon marinara sauce over insides of potatoes. Mix with fluffed potato a bit.
  • Add pepperoni slices (Or other toppings, of choice. See notes below.)
  • Sprinkle cheese on top.
  • Add a few more pepperoni slices, if desired.
  • Place potatoes back in oven and bake, watching closely, until the cheese has melted.
  • Serve hot.

Notes

  1. Recipe is for 2 "pizzas". Naturally, it is easy to double or more for a family or friend's dinner.
  2. Pepperoni is a delicious choice for a topping. However, substitute whatever toppings you and your family prefer. You know what you like. (If you and I started listing examples of pizza toppings here, this recipe would go on for many pages. However, please leave a comment below, sharing with everyone, if you find an especially good combination.) A good and fun idea with kids or guests is to have a selection of topping choices and allow each person to customize their potato pizza.
