Cheese Shell Mini Tacos Recipe

Ingredients

Shells

• 3 cups of freshly shredded Cheddar Cheese (or experiment with your favorite Cheeses)

Beef Taco Filling

• 1 pound Ground Beef
• 1 small Onion, diced
• 3 cloves Garlic, chopped
• 1 Jalapeño, seeded and diced
• 1 packet Taco seasoning
• 1/3 cup Water (if needed)

Dressing

• Any dressing you like on a traditional taco – Lettuce, Salsa, Sour Cream, Guacamole, etc.

Directions

Cheese Taco Shells

1. Preheat your oven to 350°F.
2. Place cheese in neat piles on an ungreased baking sheet.
3. Place in hot oven and bake for about 8 minutes, until all the individual shreds melt into one disc. Be careful not to let the cheese color too much.
4. Once they are all melted, remove from oven and let them cool for 2 minutes on your baking sheet.
5. Lift off sheet and place onto paper towels to blot off any excess grease.
6. To form the shells, while cheese disks are still warm, place over a propped up utensil. (Or you can use anything in your kitchen, a wide bowl or saucepan could work too.) Set aside to cool.

Taco Filling

7. Browning ground beef on a high heat.
8. When browned, drain off most of the grease.
9. Throw in onion, garlic and jalapeños. Sprinkle taco seasoning packet over mixture.
10. Add water, if needed.
11. Cook, stirring, onions are done.
12. Remove from heat.

Cheese Shell Mini Tacos

13. Fill cheese taco shells with beef mixture and dress as you would a traditional taco.
14. Enjoy.
