Cherry Tomato Summer Pasta with Lemon Breadcrumbs Recipe

Cherry Tomato Summer Pasta comes together very quickly in the skillet. As soon as the heat bursts the tomatoes, this wonderful taste of late Summer is ready to serve and enjoy. Originally called Skillet Burst Cherry Tomato Summer Pasta with Lemony Breadcrumbs originally, this recipe is by the amazingly talented Tieghan of Half Baked Harvest.

Ingredients
  

  • Lemony Torn Ciabatta Croutons (See Box Below for this Recipe)
  • 1 pound Bucatini Pasta or other long Pasta
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 cups ripe Cherry Tomatoes
  • 4 cloves Garlic minced
  • 2 tablespoons fresh Thyme Leaves
  • 1 tablespoon chopped fresh Oregano
  • Salt and freshly ground Black Pepper to taste
  • Crushed Red Pepper Flakes to taste
  • 1/3 cup White Wine
  • 1/2 cup Manchego Cheese (or Pecorino Romano or Asiago) grated
  • 1 large handful fresh Basil roughly chopped
  • 2 balls fresh Burrata Cheese (or fresh Mozzarella)

Instructions
 

  • Prepare pasta according to package directions. Just before draining, remove 1 cup of the pasta cooking water. Drain. Set aside.
  • While pasta is cooking, place skillet reserved from making the croutons over high heat.
  • Add olive oil.
  • When oil is hot and starts to shimmer, add tomatoes, garlic, thyme and oregano. Add a pinch each of salt, pepper and red pepper flakes.
  • Cook, stirring, until the tomatoes begin to burst, about 4 - 5 minutes.
  • Pour in the wine, cook 1 minute.
  • Add drained pasta and about 1/8 cup of the pasta cooking water. Toss to combine.
  • Remove from the heat.
  • Quickly manchego cheese and basil. Toss to combine. If needed, use a bit more of the reserved pasta cooking water, adding a small amount at a time, to thin the pasta sauce.
  • Place the pasta into serving bowls.
  • Top with 3 or 4 dabs of burrata
  • Add bread crumbs. Be generous, they are delicious.
  • Eat and enjoy. You are in for such a treat.

Notes

Note - I used the Manchego and Burrata Cheeses the original recipe calls for - but I think the substitutions would work fine. Be sure to make the Lemony Torn Ciabatta Croutons recipe first.
