Rocky Road Cookies Recipe

Rocky Road Ice Cream is one of the best selling flavors in America. It's easy to see why - it has chocolate, nuts and marshmallows. These cookies take those classic flavors and turn them into a bite-sized treat that everyone will love. They are much easier than ice cream to take to work and share, too.

Ingredients
  

  • 1 cup Semisweet Chocolate Chips
  • 1/2 cup Butter or Margarine
  • 1 1/2 cups All-Purpose Flour
  • 1 cup Sugar
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Vanilla
  • 1/4 teaspoon Salt
  • 2 Eggs
  • 1 cup chopped Nuts
  • About 48 Miniature Marshmallows

Instructions
 

  • Melt 1/2 cup chocolate chips and butter in 1-quart saucepan over low heat, stirring occasionally, until smooth.
  • Remove from heat. Cool slightly.
  • Heat oven to 400°F.
  • Mix melted chocolate mixture, flour, sugar, baking powder, vanilla, salt and eggs in large bowl with spoon.
  • Stir in nuts and remaining 1/2 cup chocolate chips.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet (I used Parchment Paper).
  • Press 1 marshmallow into center of each cookie.
  • Bake 8 to 12 minutes or until almost no indentation remains when touched in center.
  • Immediately remove from cookie sheet to wire rack.
