Caprese Skewers with Balsamic Glaze Recipe

Equipment

  • 16 6-inch Wooden Skewers

Ingredients
  

  • 16 Red Cherry or Grape Tomatoes
  • 16 Yellow Cherry or Grape Tomatoes
  • 32 medium fresh Basil Leaves washed and patted dry
  • 16 Ciliegine (Mini-Mozzarella Cheese Balls)
  • 1 cup Balsamic Vinegar
  • 2 tablespoons high-quality Extra-Virgin Olive Oil to drizzle

Instructions
 

  • Thread a red tomato onto a wooden skewer.
  • Fold 1 basil leaf in half, dark side facing out. Add it to the skewer.
  • Add 1 mini-Mozzarella ball.
  • Add another folded basil leaf
  • Finish with 1 yellow cherry or grape tomato.
  • Repeat with remaining skewers until you have 16 completed skewers.
  • Arrange on a serving platter and set aside.
  • Glaze
  • Place a small sauté pan over medium-high heat.
  • Add balsamic vinegar. Cook, stirring frequently, until the vinegar is reduced to about 1/3 of its original volume, about 8 - 10 minutes.
  • Remove glaze from heat and cool for several minutes.
  • Drizzle glaze over skewers.
  • Drizzle extra virgin olive oil over skewers.
  • Serve immediately.

Notes

The warm balsamic glaze will start to melt the cheese on contact. If possible, avoid dripping the glaze onto the cheese while drizzling it onto the skewers.
