Creamy Coleslaw Pasta Salad Recipe
Why is it the most obvious ideas are sometimes the ones we never think of? We love Coleslaw. We love Pasta Salads. The idea of putting them together in a Coleslaw / Pasta Salad should have been obvious. Well... We didn't think of this good idea - but we do know a good idea when we see one.

- 6 ounces dried Spiral (Penne) Pasta Penne Pasta
- 3 cups shredded Green Cabbage
- 1 Red Bell Pepper seeded and thinly sliced
- 1 Red Green Pepper seeded and thinly sliced
- 1 medium Onion halved and thinly sliced
- 1 Carrot cut into thin matchsticks
- 1/2 cup Mayonnaise or more as needed or desired
- 2 tablespoons Wholegrain Mustard
- 2 tablespoons Red Wine Vinegar
- Salt and freshly ground Black Pepper to taste
Prepare pasta according to package directions. Drain and rinse under cold water. Drain again.
Place pasta into a large mixing bowl.
Add cabbage, prepared peppers, onion and carrot. Toss gently to mix. Set aside.
In a separate bowl, whisk together mayonnaise, mustard and vinegar.
Add mayonnaise mixture to pasta mixture. Toss gently, but well, to combine.
Taste. Add salt and pepper, to taste.
Store in a tightly covered container, in the refrigerator, until ready to serve.
